To get a basic idea about your odds I made a simulation program to find out what your odds are of winning a roll. For example the first square says that if you attack with 2 dice against 1, you have 83% chance of winning. Each square is a result of 1,000,000 rolls, and if I do it again I get the same results (so it's accurate)

Hi everyone!
I made a program that does *exact* calculations, and here are odds rounded to 3 decimal points.

1 2 3 4 5 6 7 8
1 41.667 9.259 1.157 0.077 0.002 0.000 0.000 0.000
2 83.796 44.367 15.201 3.588 0.610 0.077 0.007 0.000
3 97.299 77.855 45.358 19.170 6.071 1.488 0.289 0.045
4 99.730 93.924 74.283 45.953 22.044 8.342 2.545 0.638
5 99.985 98.794 90.935 71.808 46.365 24.245 10.363 3.674
6 100.000 99.822 97.530 88.395 69.962 46.673 25.998 12.151
7 100.000 99.980 99.466 96.154 86.238 68.516 46.914 27.438
8 100.000 99.998 99.907 98.953 94.773 84.387 67.346 47.109

For example, if 4 dice attacks 2 dice, the odds of winning is 93.924%

I hope the formatting won't be screwed.
Have fun!

Good to see that someone can do it exact; I couldn't. Here's a nice layout (I hope) :
