If I recall reading correctly, Ryan has it programmed to add tables with higher minimums when a certain number of players have achieved a specific level of points. Not sure if it was something Ryan said in a forum post, or hearsay from another player, but I think that is the way it works. I imagine that it will happen soon.

I'm pretty sure they show up when 250 players reach 1700

Pff. SO 'e mentioned three. As of yet, that leaves 13 of mine uncountered. I can only assume everyone else has been put into a state of awe in which they are incapable of further response.
